Proton is only sandboxed if you use it with a flatpak Software. Ether steam, bottles or Rufus, all of them available as flatpak.
You may need flatseal to give it access to specific stuff outside the sandbox, like mounted isos, for example.

You will have terrible with nvidia, if you choose a the wrong distro and you are not knowing about vulcan and mesa drivers and that there are lib32 versions of those needed for steam if steam is not installed as flatpak (I not recommend that, because you have to give it access to mounted iso/disks and maybe other stuff using flatseal) , I guess.
Isn‘t it very easy to spin up a Debian with Docker installed and just pull those Docker container yml files straight from freedesktop.org using docker compose? (Portainer would be a webGUI for the containers)

Yea, I understand the problems you describe and I am not a genius who knows how to solve that problem. I want to point out that I consider ads and tracking as privacy invasive.
In my opinion the solution should be a way where we can ensure loss of media at all cost where the whole humanity has access to all human culture and knowledge in a reasonable timeframe (not the livelong time the copyrights hold today)
And competition on the market should be about the best way to deliver content, not about on delivering which content.

Some still exist, but got updates that they not at all behaving like remembered or having tons of ads making it impossible to game

I am so happy that they released Hill Climb Racing again without ads, sadly it is on Apple Arcade, but luckily my parents have a Apple One subscription that I am allowed to use through family sharing (for the time being)
But if this subscription is ended, I have no way on playing Hill Climb Racing in a version without tons of micropayments and ads.
